I know what you mean. I kind of have the same problem. Additionally, if I have anything approaching a chapter finished, I usually feel compelled to post it. I have a couple of abandoned series over on FF.net that are probably never going to be finished...
What I'm trying to do to avoid that is only allowing myself to post WIPs on LJ. I'm not allowed to post anything on FF.net or AO3 until it's finished. That way I get the instant gratification of having someone read it, but I still have incentive to actually finish. Considering I've actually managed to finish three chapter fics this way (and, Jesus, my Heroes crossover has made it to eleven chapters so far--or seventeen if you count the flashback chapters...), I like to think it's working so far...
Unfortunately, it also means I have three chapter stories in progress, in addition to one particular brain eating AU that promises to supply a never-ending supply of inspiration for demented one-shots to distract me from my other goals. :/
